We continue the #WakieToBreakie series with one of the most popular breakfast dishes in Colombia, huevos pericos. It basically consists of scrambled eggs with tomato and scallions, served with arepa (flatbread made of ground maize) and cheese. It usually comes with hot chocolate, but I personally associate it with marshmallows, Christmas tree and large sweaters and it automatically makes me wanna go to sleep. So I chose a fresh pineapple juice and black organic Colombian coffee instead. And added a small jar of arequipe (dulce de leche) for dessert. Now the real challenge is to not eat the entire jar, diabetes never sleeps!
